Strikes me you could use Piezo-electric force sensors to sense the weight of the individual, and reliably map each individual to the same response each time, through some random-seeming mechanism (like choosing weight intervals).

The chair discussion went much further than just a chair - one concept was to rotate a loo seat through 90 degrees and then get people to bend over and walk backwards towards it, with the foirce of their backwards walking measured and displayed as a score. But at the same time, spectators would see a video camera view of the same scene, but rotated through 90 degrees, so that the person/victim would apparently fall downwards onto the loo seat!
